1 large red bell pepper sliced into 2 x 1/2-inch pieces

1 medium zucchini sliced in half lengthwise, then cut into 1/2-inch thick half rounds

1/4 medium red onion cut into chunks

16 Sun Gold or cherry tomatoes

8 cremini mushrooms stems removed

8 metal skewers

1/3 cup extra virgin olive oil

1 large juicy lemon use zest from whole lemon and juice from half

1/2 teaspoon dried oregano, or to taste

1/2 teaspoon garlic powder, or to taste

Fresh ground black pepper, to taste

Salt, to taste
