Ground Turkey Soup

Ingredients

1/4 cups Olive oil

1-1/2 pounds Organic Ground Turkey

8 cups Chicken broth

1 tablespoon Smoked paprika

1 teaspoon Freshly ground black pepper

2 cloves minced garlic

1/2 each yellow onion finely chopped

1/2 cup Green Lentils

1/2 cup Quinoa

2 each Red pepers julienned

1/2 cup carrot julienned

2 each Leeks sliced


Directions

On a large pot heat olive oil and sauté onions and garlic until fragrant Add ground turkey, paprika and black pepper and cook through Add chicken broth, lentils and quinoa to the cooked turkey and cook at medium heat for 5 to 7 minutes On a separate pan, heat olive oil and sauté bell peppers, leeks and carrots for 5 minutes, do not overcook Mix the sauteed vegetables to soup, add salt to taste and bring to boil. Cover and reduce to medium heat and let it cook for 10 minutes
