Gyro Beef Brisket Sandwich with Lemon-Feta Tzatziki

Ingredients

3 tblsp Olive Oil, Divided

3 lbs Beef Brisket Trimmed and Coated with Salt, Oregano and Black Pepper

1 cup Low-Sodium Beef Broth

1 large Onion

1 cup Plain Yogurt

1 cup Crumbled Feta Cheese

1 cup Chopped Cucumber

1 Lemon (Minced Zest)

2 tblsp Fresh Lemon Juice

1 tblsp Minced Fresh Oregano

4 Chopped Scallions

6 6-inch Flatbread Rounds

2 cups Shredded Romaine Lettuce

1 cup Seeded, Diced Tomato


Directions

Heat 2 tablespoons oil in a skillet over medium-high heat. Add brisket; sear 5 minutes per side. Transfer meat to a 4 to 6 quart slow cooker. Deglaze skillet with broth, scraping up browned bits. Add broth and onion to slow cooker. Cover, cook on high-heat setting for 4-5 hours. Remove the meat and onion and set on a plate; using two forks, shred meat. Puree yogurt, feta, cucumber, scallions, zest, lemon juice, oil, oregano, salt, and pepper in a food processor until smooth. To serve, divide the meat and onion among flatbread rounds. Top each sandwich with romaine, tomato, and tzatziki.

Lovely really nice sauce I peeled the Cucumber skin off for a smoother blend. Beef brisket so soft but it needs a better flavour profile to make it Greek.

Yummy, for the sauce I would recommend purée the cucumber first and drain the excess liquid. Then add the scallion and oregano, feta cheese and finally the yogurt and salt and pepper.
