Helen's Lentil Soup

Ingredients

2 cups lentils

2 quarts water

2 each slices of bacon

1 each onion chopped

1/4 cup chopped carrots

1/2 cup chopped celery

3 tablespoons parsley

1 each clove garlic

2 teaspoons salt

1/4 teaspoon pepper

1/2 teaspoon oregano

1 can (16 oz) canned tomatoes

2 tablespoons wine vinegar

1 1/2 cups toasted croutons


Directions

COMBINE ALL INGREDIENTS EXCEPT TOMATOES, VINEGAR, AND CROUTONS. SIMMER FOR 1 1/2 HOURS. ADD TOMATOES AND VINEGAR AND SIMMER FOR 30 MORE MINUTES. SERVE HOT WITH CROUTONS ON TOP.

Good recipe. Loved it. However, during cooking I needed to add 3 cups of water. Otherwise it would have been too thick. Also, I realized I was out of bacon but made the recipe without it, and it was fine. I plan to make it again soon. Thank you Helen for the recipe!
