Holiday Roast Beef Salad

Ingredients

Salt and pepper

Chopped parsley

1 14 oz. can artichoke hearts,

1 sm Red pepper, seeded and cut

8 oz Alfalfa sprouts

1/4 c Wine vinegar

1 lb Roast beef, thinly sliced

1/2 c Olive or vegetable oil


Directions

Arrange the alfalfa sprouts on a large platter. Roll up the roast beef slices and arrange on top of the sprouts. Place the artichoke hearts between the beef rolls and garnish the center with red pepper strips. Mix the oil, vinegar, and salt and pepper to taste. Spoon over the salad. Sprinkle with chopped parsley. To make ahead, keep the salad and dressing separate until serving time.
