Hummus

Hummus is a healthy and flavorful appetizer and snack. Cucumbers, carrots, bell peppers and snap peas are perfect dippers. If you want to take your hummus to another level, boil dried chickpeas and use instead of canned ones. The texture will be amazing. If you are short on time, canned chickpeas will do.

Ingredients

2 15-oz cans Chickpeas Drained and rinsed, microwaved for 1 minute

1/3 cup Sesame tahini

1/4 cup Extra virgin olive oil (Plus more to drizzle)

1/4 cup Plain non-fat greek yogurt

Water

7 cloves Roasted garlic

2 tablespoons Fresh flat-leaf (Italian) parsley (Plus more for garnish)

1 Lemon Use juice and zest

1 teaspoon Ground cumin

1/2 teaspoon Cayenne pepper

3 dashes Paprika (For garnish)

Pink Himalayan salt


Directions

1. In a food processor, combine chickpeas, tahini, olive oil, and yogurt until smooth. Add water to thin if necessary. 2. Dump in garlic, parsley, lemon juice and zest, cumin, cayenne pepper and salt to taste, then combine until smooth. 3. Scoop hummus into a serving bowl. Drizzle with olive oil and top with a few dashes of paprika and chopped parsley if you wish. 4. Add pink salt to taste 5. Serve with pita bread or vegetables for dipping. Add more cayenne pepper for spiciness.

Good recipe, quite tasty. I add about 1/3c of sliced jalapenos to give it a bit more kick.

Really liked this. It needed a bit more seasoning for my taste and less lemon, but i added some extra paprika, salt and pepper and it was delicious. I also only made half the recipe and there is still loads!
