Irresistable Chocolate Chip Pancakes

Ingredients

4 cups all-purpose flour

1/2 cup sugar

1/4 cup baking powder

2 teaspoons salt

4 Eggs

3 cups milk

1/2 cup vegetable oil

1 cup miniature chocolate chips

2 cups honey

1 cup butter or margarine cubed

2 teaspoons ground cinnamon


Directions

1. In a bowl, combine the flour,sugar,baking powder, and salt.Combine eggs,milk and oil; add to dry ingredients and mix well. Stir in chocolate chips. Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Keep warm. 2. Combine the syrup ingredients in a 2-cup microwave-safe bowl. Microwave, uncovered, on high until butter is melted and syrup is hot, stirring occasionally. Serve with pancakes.

I made these for the first time today. Super easy. I halved the recipe, and the resulting quantity was good for our family of four with several pancakes still leftover. They were a hit with my high schooler, and I’ve now earned the family “pancake guy” title going forward. I’ll be making them again.

We used three types of chips. Used Nutella for a light topping. What was not eaten was used for school day breakfasts.
