Italian Spring Primavera

Ingredients

1 zucchini spiralized

1 cup broccoli florets chopped

1 cup black olives sliced

1/2 cup sundried tomatoes chopped

3 shitake mushrooms sliced

1 Tablespoon Balsamic vinegar

1 Tablespoon basil

1 Tablespoon oregano

olive oil

salt and pepper

1/2 avocado sliced thinly


Directions

If you have one of those handy kitchen gadgets known as a Spiralizer you will use it to make faux pasta from the zucchini. In the event that you don’t have one, you can grate or finely peel the zucchini lengthwise as a suitable substitute. Place zucchini ‘noodles’ in serving bowl. Add all remaining ingredients, drizzle with olive oil, toss well and season to taste. Garnish with avocado slices and a few chunks of red pepper.
