Jamaican Fruit Loaf

Ingredients

1/2 ts Salt

3 tb Clear honey

8 oz Bananas - peeled and mashed;

2 Eggs - size 3 - beaten

8 oz Self raising flour; (225g)

4 oz Brown sugar; (100g)

8 oz Raisins; (225g)

1 Heaped tsp Schwartz Ground

1/4 ts Bicarbonate soda

3 oz Margarine or butter -


Directions

Preheat oven to 350F, 180C, Gas Mark 4. Cream the margarine or butter and sugar together. Stir in 2 tbs of honey. Add the beaten eggs and mashed bananas. Mix well. Sieve the flour with the Ground Allspice, bicarbonate of soda and salt. Carefully fold the flour mixture and raisins into the creamed ingredients. Place in a 8 inch x 4 inch (20cm x 10cm) greased and lined loaf tin. Bake in the oven for approx 1 hour or until well risen and firm to touch. Remove the loaf from the tin and glaze the top with the remaining honey. Leave to cool. Quantity: Makes approximately 12 slices

I used this recipe but without bananas and I didn't use clear honey I used white honey. It worked just as well and the family enjoyed it. Delicious
