Ingredients

2 lbs Beef Smoked Sausage

1 medium white onion diced

1 large Green Bell Pepper diced

1 28 Oz Can Diced Tomatoes

2 cups Chicken broth

2 cups uncooked white rice

1/2 teaspoon Creole Seasoning (I use Tony Chachere's; season to taste)


Directions

Preheat oven to 350 degrees Cut up sausage into slices 1/4''-1/2" thick add to 8 quart pot. Saute meat until fully cooked. Add diced onion pepper, and seasoning to meat and cook until tender. Add tomatoes, chicken broth, and uncooked rice. Let cook until a small boil (between 5-10 mins) begins. Stir well and add to preheated oven. let bake in oven for 30 mins. take out, stir and serve.

Love this meal. Thanks for the recipe been looking for it for a while now, found similar, but this is a really nice one. Only difference is that I used jasmine rice (that's all I had in) tasted just as nice.
