Keto Smothered Pork Chops in Mushroom & Onion Gravy

Ingredients

4 tbsp coconut oil divided

2 cups onions, thinly sliced

2 cups chicken or beef broth

4 8 oz bone in pork chops

1/2 tsp fine sea salt

1/4 tsp ground black pepper

2 cups button mushrooms sliced


Directions

To make gravy, melt 2 tbsp. coconut oil in large skillet over med heat. Add onions and saute for 5 min, stirring occasionally. Add broth and cook for 20-30 min, until broth is reduced by almost half, then slide skillet off the heat. Meanwhile, sprinkle pork chops with salt and pepper. Melt remaining 2 tbsp. coconut oil in large cast iron skillet over med-high heat. Add mushrooms and saute for 6 min or until brown. Season mushrooms with salt and pepper. Move mushrooms to the skillet with the gravy, then place chops in hot cast iron skillet. Sear on one side for 3 min, then flip and cook another 7-10 min, until internal temp is 135F. Let chops rest for 8 min before serving. Place chops on platter and smother with mushroom and onion gravy.
