Lamb & Potato Stew (Lebanese Cuisine)

This is a real Comfort Food, Passed down from my Father. Great in Winter and just as good in summer. A very Hearty stew.

Ingredients

2 pounds Lamb Cut into 3/4 inch Cubes

3 extra large Potatoes Cut into 1/2 inch cubes

1 extra large Onion Finely chopped

6 cloves Fresh garlic, peeled Finely Chopped

2 heaped teaspoons Salt

1 heaped teaspoon White pepper

1 heaped teaspoon Cinnamon

4 tablespoons Tomato paste

1/4 cup Vegetable oil

1 tablespoon Butter

10 cups Water


Directions

Place vegetable oil in Pressure cooker. Brown Lamb cubes for 5 minutes. Add Onion and continue frying while stirring for 2 minutes. Add garlic and fry for another 2 minutes while stirring. Add Salt and Pepper and cinnamon. Add enough water to cover ingredients by 2 inches. Bring to a boil and close pressure cooker. Cook on low heat for 40 minutes. Cool Pressure cooker CAREFULLY !!! and open. Add Potatoes while stirring. Add enough water to cover ingredients by 1 inch. Bring to the boil and close pressure cooker. Cook on Low heat for 20 minutes. Cool pressure cooker CAREFULLY !! and open. Add tomato paste while stirring. Boil down stew until it thickens slightly. Add butter while stirring. Serve over rice with vermicelli noodles in it :)

Similar to the way I cook it, but to me, cooking lamb in pressure cooker for 60 min is a bit too long. I usually cook lamb for about 35 to 40 min in the pressure cooker. I guess it depends on the cooker brand; some are faster than the others. Great recipe!
