Leeks and Goat's cheese on toast

Ingredients

1 tbsp Olive oil

2 large leeks or 3 medium ones, washly and finley shredded

2 cloves Garlic peeled and finely sliced

1 tsp Cayenne pepper

1/2 tbsp wholegrain mustard

1/2 mug goat's cheese (about 100g)

some salt and fresh ground black pepper

4 slices toasted granary bread or wholemeal, ciabatta etc


Directions

Heat olive oil in a saucepan or lidded frying pan and add the leeks, garlic and cayenne pepper. Place the lid on the pan and leave the mixture to sweat for about 15 minutes, stirring occasionally. When the leeks are soft, add the mustard and cheese and stir thoroughly until the cheese has melted. Season the mixture with salt and pepper, and pile onto the toast. Place under the grill until the tops turn a light golden colour and serve.
