Lemon and Garlic Shrimp on Noodles

Excellent with fresh shrimp. Crusty bread to sop up the liquid and green salad are perfect with this dish.

Ingredients

2 pound Shrimp peeled and deviened- cut in half if large

1 large Sweet onion chopped large about 1/2"- best is Vidalia Onion!

4 cloves Garlic minced

1/4 cup Extra virgin olive oil or more

3 tablespoons Butter or more

2 16-oz can Diced tomatoes with juice- 1 can per pound of shrimp

4 to 6 Lemons juice from- depends on lemons

1/2 teaspoon salt to taste

1/2 teaspoon Ground black pepper to taste

16 ounces Spaghetti even better use the lemon pepper noodles

1/4 cup Parmesan cheese grated


Directions

Saute the onions in the butter and a good amount of olive oil. When the onions are just soft, add the garlic and saute for 2 more minutes. When the onion is done, add the tomatoes with juice and the lemon juice. Salt and pepper to taste. Bring to a simmer and add the shrimp. Cook for about 3 minutes, until the shrimp are pink, but do not over cook. Taste and adjust the salt, pepper and lemon juice. Serve over cooked noodles and top with some grated Parmesan cheese. The amounts are approximate but you want the sauce to be very lemony before you put in the shrimp as it will tone it down.

Yummy. I used whole peeled tomatoes, added some black olives and a bit more garlic and olive oil.

I added a tbsp Sriracha in place of the pepper and added a tsp of oyster sauce to this recipe and it was great! I'd recommend adding fresh basil or mint leaves to round it out a bit.

I changed this recipe around a little bit because I didn't have the exact ingredients it called for. Instead of using plain 16 oz. cans of tomatoes I used two 14.5 oz. cans, one was just plain tomatoes the other had green chiles added which added a little heat, served w/ bowtie noodles (again all i had in hand) It was quite juicy so I added about a tbsp. of flour to thicken it up a bit. It was wonderful!!!! My kids thought it was too spicy but I will definately prepare this one again! (it's good cold too)
