Lemon Curd Krummeltorte

A quick and simple lemon dessert. Can also be made with jam and fruit.

Ingredients

2 cups Self raising flour

1 cup Sugar

100 grams Butter

2 Eggs

1 cup lemon curd

1 tablespoon icing sugar


Directions

Pre heat oven to 180 degrees. Place the self raising flour, sugar and butter in a food processor. Run the machine until the mixture resembles breadcrumbs. Add the eggs and mix until combined. Press 2/3 of the mixture into a greased 23 cm cake tin lined with baking paper. Spread the lemon curd over this and crumble the rest of the mixture over the top. Bake for 35 - 40 mins. Dust with icing sugar before serving
