Lemon Meringue Pie

Directions

Combine sugar, water and salt in a medium saucepan. Heat to boiling. Mix cornstarch and cold water in separate dish to a smooth paste. gradually add to boiling mixture, stirring constantly. cook until thick and clear. remove from heat. combine lemon juice and egg yolks in a separate dish. stir into cooked mixture until smooth. return from heat and stir in butter. cover and cook until lukewarm. beat egg whites and salt until frothy. add sugar gradually until stiff peaks form. stir 2 tbsp meringue into filling. pour filling into cooled shell. top with meringue and spread edge of crust. bake at 325 for 15 minutes...coool
