Loretta's Buttermilk Pancakes with Wild Blackberries (Tom Douglas)

Ingredients

3 cups all purpose flour

1 T sugar

1 1/2 tsp. baking soda

1 1/2 tsp. kosher salt

1 tsp. baking powder

2 large Eggs

3 1/2 cups buttermilk

1/4 cup unsalted butter

pure maple syrup

1 pint fresh blackberries


Directions

Sift together flour, sugar, baking soda, salt, baking powder. In another bowl, combine eggs and buttermilk, add melted butter. Gradually add wet mix to dry mix, stirring with wooden spoon until just smooth. Heat nonstick griddle over medium high heat and drop batter by 1/4 cupful into hot pain and cook until full of bubbles and bottom side is golden, 2-3 minutes. Flip and cook the other side, about 1 more minute.
