Low Fat Fiesta Dip

Sweet red peppers and shredded cucumbers add crunch to this low-fat dip. This Mediterranean style dip can be served with toasted pita wedges, low-fat crackers or raw vegetables.

Ingredients

0.5 cup Cucumbers shredded

1 cup Nonfat sour cream

0.5 cup Sweet red pepper minced

1 clove Garlic minced

0.5 teaspoon Dried thyme


Directions

Shred cucumber and squeeze all of the excess moisture rom them. Place them in a small bowl and add the sour cream, peppers, garlic and thyme. Mix well and chill until needed.
