Leeks sliced, 3inch section

3 cloves Garlic minced

1 Jalapeno diced, use half

2 tablespoon Dijon mustard

1 1/2 cup Milk

1 1/2 cup Heavy cream

8 ounces Sharp white cheddar

8 ounces Gouda

6 tablespoon Flour

6 tablespoon Butter

1 pound Cavatappi pasta

Pancetta

Thyme

Cayenne


Directions

Boil pasta Saute PANCETTA Remove PANCETTA, reserve fat Saute LEEKS, GARLIC, JALEPENO in BUTTER. Add 1 tablespoon FLOUR to each tablespoon of butter/fat added. Add MILK/ HEAVY CREAM Add DIJON MUSTARD Allow to thicken Add CHEESES
