Made with love, way better than from a box—and just as easy! I always double the cheese sauce and freeze some for later. It’s great on broccoli and other cooked veggies—OR just another batch of mac ‘n cheese.

6 oz. elbow macaroni 1 1/2 cups
3 T. butter or margarine
1/4 cup onion finely chopped
2 T. flour
1/2 T. salt
Dash of pepper
2 cups milk
2 cups American cheese cubed
Great when you are cooking for a crowd. To add some complexity put in some cinnamon and gruyere cheese. Bake with breadcrumbs on top.
