Ingredients

1 clove garlic

1 small red onion

3 ounces sundried tomatoes

big handful italian parsley

16 oz cannellini beans

16 oz garbanzo beans

2 tblsp vegetable oil

2 tblsp horseradish

1 tblsp tabasco green pepper sauce

1 tblsp coarse ground black pepper

1 tsp ground cumin

1 tsp chili powder

juice of two limes

4 ounces lo-fat sour cream


Directions

Combine garlic, quartered onion, sundried tomatoes, rinsed parsley in large processor bowl. Pulse until coarse (so still has good texture, not pureed), remove to medum-size mixing bowl. Next, in processor, combine all beans, vegetable oil, horseradish, tabasco, black pepper, cumin, chili powder, lime juice. Process till smooth. Stir bean mixture together with tomato mixture in the mixing bowl. Add sour cream, stir. Refrigerate for at least and hour to let flavors combine. Serve with crackers, pita bread, or assorted vegetables.
