Mama Avila's Chicken Soup

Ingredients

100 fluid oz Chicken Broth

3 ea Large skinless, boneless Chicken Breasts cubed

14 ounce Fresh Salsa

1 bunch Green Onions Including the greens, chopped

1/2 cup Cilantro Chopped

2 packages Mahatma Spanish Rice Mix prepared Separately

1 pinch Lawry~quotes Salt to taste

1 pinch Ground Cumin seed to taste

1 pinch Cayenne pepper to taste

1 ea Large avocado sliced

1 ea Fresh lime, sliced into wedges


Directions

Pre-cook chicken to "Just done" in microwave and cube them to spoon size bites. Pre-cook the Mahatma spanish rice in a separate pot following the package directions. Place the chicken broth, salsa, chicken breasts, green onions, cooked rice, and one half the cilantro into a large soup pot, and simmer on medium low heat. Season to taste. To serve, bring up to serving temperature. Ladle into soup bowls, and garnish with sliced avocado and fresh cilantro, and a slice of lime on the side. I recommend a squeeze of lime in the soup prior to enjoying it.
