1 Ripe mango; peeled, seeded

1/4 c Red Bell Pepper diced

1/2 Lime; juice of

1/4 c Chopped fresh basil (or

1/4 c Chopped scallion

Its superb and a delightful accompaniment to mixed salad greens for a lite, refreshing summer meal. Combine mango, scallion, red bell pepper, basil, and lime juice. Stir to blend. Delicious served over a mixture of fresh salad greens. Garnish salad with sliced cucumber and wedges of tomato(or chop cucumber and tomato and combine with the salsa). Makes about 4 servings.
