Ingredients

1 Eggplant

4 tablespoons Olive oil

2 Cloves Garlic

2 tablespoons Parsley

1 tablespoon Thyme

2 tablespoons Lemon Juice

Salt and pepper to taste


Directions

Cut eggplant in half and make a couple slashes Add everything except lemon juice in glass dish Marinate cut side down for three hours covered Bake at 350 for 45 min Baste with cooking juices and lemon juice and cook ten minutes Serve hot
