Marrakesh Express Red Lentil Soup

Ingredients

1 Onion chopped

4 Celery ribs, chopped

Water

1 Bay leaf

1-2 tablespoon Fresh ginger chopped

1/2 teaspoon ground cinnamon

1/2 teaspoon ground turmeric

6 cups vegetable broth

4 Plum tomatoes chopped

1 cup red lentils

1 15-ounce can chickpeas

2 tablespoons Lemon Juice

1 bunch Cilantro chopped


Directions

Water sauté onion and celery until tender. Add bay leaf, ginger, cinnamon, turmeric, vegetable broth, tomatoes, lentils, and chickpeas. Bring to boil, lower heat, and simmer, covered, for 45 minutes, until lentils are tender. Stir occasionally. Right before serving, add cilantro lemon juice.
