Ingredients

9x9 in. baking pan

1 cup potato starch

1 cup powdered sugar

1/2 cup water

3 envelopes powdered gelatin 22g

2 (or less) teaspoons flavor extract optional

1.5 cups granulated sugar

1.25 cups light corn syrup other sugar syrup optional

1/2 cup water

small pinch salt

2 teaspoons vanilla extract


Directions

Dusting Mixture 01. Whisk 1 cup powdered sugar and 1 cup potato start Prepared Baking Pan 01. Grease 9x9 baking pan with a neutral-flavored oil 02. Dust thoroughly with Dusting Mixture, not missing any part of the pan (don't use all of the mixture) Gelatin Bloom 01. In a stand mixer bowl add 1/2 cup water 02. (Optional) Add 2 teaspoons or less of a flavor extractive (not vanilla extract) 03. Sprinkle in 3 envelopes of powdered gelatin 04. Let the mix sit Sugar Syrup 01. In a medium pot, whisk together 1.5 cups of granulated sugar, 1.25 cups light corn syrup, 1/2 cup water, and a small pinch of salt 02. Set the medium pot over medium-high heat and bring to a light boil (don't boil too hard) (do not stir) 03. Continue boiling until the syrup reaches 240 degrees F (5-6 min) 04. Remove from heat MARSHMALLOWS 01. With the whisk attachment, start whisking the Gelatin Bloom on low speed 02. Slowly stream the Sugar Syrup down the side of the bowl, gradually increasing the mixing speed up to high 03. Keep whisking until voluminous and thick (about 5 min) (thick ribbons drip off whisk) 04. Whisk in 2 teaspoons of vanilla extract (optional) 05. Immediately remove from stand mixer and pour contents into the Prepared Baking Pan 06. Dampen hands and spread evenly to the edges of the pan 07. Let rest uncovered overnight (at least 12 hours) 08. Powder top with Dusting Mixture 09. Dust cutting board with Dusting Mixture 10. Remove marshmallows from baking pan and place cutting board 11. Grease knife with neutral-flavored oil then Dusting Mixture 12. Cut marshmallows into squares 13. Dust marshmallows with Dusting Mixture and toss until all cut sides are coated
