Mayonnaise Cake

This yummy chocolate cake with fudge icing has Miracle Whip in place of oil! It is delicious and moist with a little bit of a tang!

Ingredients

2 cups All purpose flour

1 cup sugar

1 teaspoon salt

1 cup Miracle Whip salad dressing

2/3 cup cocoa

1 teaspoon Vanilla extract

2 teaspoons baking soda Dissolved into 1 cup lukewarm water

2 cups sugar

1/2 cup cocoa

3/4 cup milk

1 tablespoon Vanilla extract

1 tablespoon butter


Directions

CAKE: Prepare the cake by mixing all cake ingredients until the batter is smooth. Pour into a greased and lightly floured 9 by 13 inch pan. Bake the cake at 350 degrees for 25-30 minutes, or until a toothpick inserted in the middle comes out clean. Allow the cake to cool before icing. ICING: Beat all ingredients thoroughly until the fudge forms into little balls when dropped in water. At that point, place the mixing bowl in cold water and beat until the icing is thick. (This step is critical, or your icing will not finish!) Ice the cake.
