Mexican Hominy

This dish will chase away the blahs at any pot luck dinner.

Ingredients

1 medium onion coarsely chopped

8 strips thick-sliced bacon diced

2 t chili powder

1 can white hominy rinsed and drained

1/4 t Salt

1 can plum whole tomatoes including juices

1 can corn rinsed and drained

1 c frozen lima beans cooked and drained

1 can green chilies chopped

4 oz Jack cheese shredded


Directions

In a medium skillet, saute bacon 2 to 4 minutes. Add onion and cook until transparent, about 4 to 5 minutes. Drain excess fat; stir in tomatoes, salt, and chili powder. Break up tomatoes with a fork. Combine the hominy, corn, lima beans, and green chilies in a 9 X 11 inch baking dish. Stir in the tomato mixture. Bake, uncovered, 30 to 35 minutes in a preheated 325 degree oven. Sprinkle cheese over top and return to oven for about 5 minutes.
