Mini Thai Meatballs and Peanut Sauce

Ingredients

1 pound ground pork

2 tablespoons Fresh Cilantro chopped

1 1/2 tablespoons Lime Juice

1 Carrot shredded

1 2 inch piece Ginger grated

Salt & pepper

1 cup asian peanut sauce


Directions

1. Heat oven to 375 degrees. Line a baking sheet with parchment or foil. 2. In a large bowl, combine everything but sauce. Shape into 1 1/2 inch balls. Set on sheet. Bake, flipping halfway through, until deep golden, 30 minutes. 3. Serve with peanut sauce for dipping, plus lime wedges (optional)
