Mom's Zucchini Bread/Muffins

Ingredients

2 3/4 cup flour sifted

1/2 cup flax

1 teaspoon salt, baking soda, baking powder

3 teaspoon ground cinnamon

3 eggs

1 cup Vegetable oil

2 cups sugar

3 teaspoon vanilla extract

2 cups zucchini grated

1 cup walnuts chopped


Directions

grease muffin pan or bread pans. Preheat oven to 325 degrees. sift flour, salt, baking powder, soda and cinnamon together in a bowl Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture and beat well. Stir in zucchini and nuts until well combined. Pour batter into muffin pan. Bake for 28 minutes for muffins. If making bread/loaf, bake 60 minutes. Can add lemon rind, chocolate chips to mixture as well.
