1/4 ts Salt
8 oz Crushed pineapple; drained
1/2 c Shredded coconut
3 lg Eggs
2 1/4 c Flour
2 c Grated carrot; (4 large)
1 Apple; shredded
1 ts Vanilla extract
1 1/4 c Granulated sugar
2 ts Baking soda
1/2 c Raisins
1/2 c Pecans or walnuts
1 tb Ground cinnamon
I leave out the coconut these are so delicious and never any left to freeze!!!!

Bars00kI made this with the following changes: I used yellow squash instead of carrots as I am allergic to carrots. Also, I omitted the vanilla as I find the extract too strong and I used lemon zest instead. Also, used golden raisins.
