Not Your Mom's Oatmeal Cookies

Ingredients

3/4 cup Brown sugar packed

1/2 cup Butter

1 1/4 cups oatmeal

1 whole egg

3 Tbsp Lowfat Milk

3/4 cup whole grain flour

1/2 tsp Baking soda

1 tsp ground cinnamon

1/4 cup milled flaxseed

1/4 tsp Salt

1/2 tsp vanilla extract

1/2 cup raisins or dark chocolate chips


Directions

Preheat oven to 375°. Mix brown sugar and butter until blended. Add oatmeal, egg, milk, and vanilla. Stir well by hand. In a separate bowl, mix flour, baking soda, cinnamon, flaxseed, and salt. Gradually add to the oatmeal mixture stirring well. Stir in raisins, and or chocolate chips. Drop spoonfuls on baking sheet, spacing one inch apart. Bake 4 minutes on lower rack, then 4 minutes on upper rack.
