Omelette Sambal

Ingredients

3 tb Peanut oil

(belachan)

1/2 ts Black Pepper ground

1 lg Onion, finely sliced

Salt to taste

1 ts Dried shrimp paste

1 ts Garlic, chopped

2 Red chillies

4 Eggs, slightly beaten


Directions

Heat oil in a wok and fry onion till soft and golden. Blend chillies, dried shrimp paste, garlic, pepper and salt to a paste in an electric blender, adding a little water to facilitate blending. Add spice mixture to onions and stir fry till mixture smells fragrant, and oil comes to the surface. Stir in beaten eggs and cook into one large omelette. Divide into 4-6 segments and serve with rice as an accompaniment. Source: The Curry Cookbook-C.
