Ingredients

4 large bone in skin on chicken thighs fat trimmed

Kosher salt and freshly ground pepper

1 tablespoon olive oil

1 red onion finely chopped

5 yukon gold potatoes cut into 2 inch pieces

6 carrots, peeled and cut into 2 inch pieces

1 teaspoon smoked paprika

1 tablespoon all purpose flour (can sub whole wheat flour)

1 1/2 cups chicken stock

1/4 cup white wine

2 teaspoons minced fresh thyme

Entire family loved it!!

The trick is to add lots of lemon juice and zest at end of recipe for the potatoes to soak up, as well as more sat and pepper to taste. This will put the flavor over the top. Perfect for guests... delicious.
