Ingredients

1 large Potato grated

1 tablespoon Olive oil

1 pinch Salt


Directions

Grate a potato with a food processor''''s help and leave the straws fort ten minutes on water with salt. Drain and set on an oven tray greased a little bit with olive oil. Put a little bit olive oil over the potatoes, the less the better. Meanwhile preheat the oven to 180 C (350 F). Put the tray inside and turn the oven up to 250 C (475 F). Leave it untill they start to be ligtly brown, about 20 minutes, depends on the potato type. Spread with table salt or use on some other recipe. Those are sprayed, but with olive oil because I don't lile too much the cooking sprays, so I use a "refillable" one with my favorite oil inside. And, with onion, I made another side dish, mixing it with sliced potatoes, crushed garlic, chopped parsley, olive oil (of course), salt and white wine. It works very good under the fish if you bake it (first you have to put this mix in the oven for a while and then put the fish on till is done) or alone with meats.

Do you think spraying them with a cooking spray before baking would work? I was thinking it might make a more uniform browning. Have you ever tried this with onion mixed in? I'll give this a try when I get some potatos in the house. Mr. SuchAFuss really likes potatoes so I try for anything new.
