Pao de Quejo (Brazillian Parmesan Cheese Puffs)

These cute little cheesy puffs are served as appetizers in Brazillian steakhouses and are so addicting I had to find the recipe for myself!

Ingredients

2 1/2 cups tapioca flour sweet or sour, up to 3 cups

1 cup milk

1/2 cup butter or margarine

1 tsp Salt

1 1/2 cups grated parmesan cheese

2 Eggs


Directions

Preheat oven to 350 degrees F. In a large saucepan bring milk, salt and butter to a boil. Remove from heat Slowly pour in flour until thoroughly mixed, stirring constantly. Add cheese and eggs. Knead with hands until smooth. Grease mini muffin tins with butter or cooking spray and drop by the tablespoon. Or, you can grease a cookie sheet and form into balls approximately 2" in diameter. Sprinkle with parmesan cheese. Bake until golden brown (about 15-20 minutes) Eat while hot!

Mine came out like scones!!! .They were dry and hard! The next day!!!

They will rise up A LOT while baking but that is how they are supposed to turn out. They are best eaten when fresh out of the oven but if you need to reheat them just put them back in the oven at 350 for 5 minutes. [I posted this recipe.]
