Peach Pockets

Ingredients

1 c. cottage cheese

3 oz. cream cheese

1 egg yolk

1/2 c. sugar

2 tsp. grated lemon zest

2 peaches peeled, cut in eighths

8 phyllo sheets

1/2 c. sweet butter melted

1/2 c. ground almonds


Directions

Mix first 5. Line baking sheet with parchment. Brush a sheet of phyllo with butter. Sprinkle with almonds. Add second phyllo sheet. Brush with butter. With sharp knife, cut in 3 equal lengthwise strips. On bottom left corner of each, place 2 Tbsp. cheese mixture and 2 peach slices. Fold up like flag. Place on prepared sheet. Brush with butter. Bake at 375F 18 min. until golden brown and puffed. Cool before serving.
