Peanut Potato Salad

Ingredients

3 lb red potatoes

12 slices bacon (optional) crisp cooked, drained, crumbled

3/4 cup mayonnaise or salad dressing

1/2 cup peanut butter chunky

1 medium red sweet pepper chopped

1/2 cup salted Spanish peanuts

2 stalks celery chopped

4 green onions chopped

1/4 cup fresh cilantro snipped

1/4 cup fresh parsley snipped

3-4 tbsp cider vinegar


Directions

1. In a large saucepan, cook potatoes in large amount of boiling water for 20-25 min or until tender; drain well and let cool. Cut potatoes into 1-inch cubes. 2. In a very large bowl, combine bacon (if using), mayonnaise, peanut butter, sweet pepper, peanuts, celery, green onions, cilantro, parsley and vinegar. Add potato cubes. Toss lightly to mix. Cover and chill for at least 4 hours or up to 24 hours.
