Pennestroika Penne with Vodka and Spicy Tomato Cream Sauc

Ingredients

pn Of salt

2 lg Garlic cloves minced

8 oz Penne or similar pasta

1/4 c Chopped parsley

1/8 c Extra Virgin Olive Oil

1/2 c Heavy cream or half and

2 tb Vodka

1/4 ts Crushed red pepper flakes

15 oz Can diced tomatoes


Directions

Combine all ingredients and mix thoroughly. In unheated large skillet combine oil, garlic, peppers and pinch of salt. Stir to coat with oil. Cook over moderate heat till garlic is golden. Stir in tomatoes and simmer for 15 minutes. Meanwhile boil water and cook pasta al dente. Add drained pasta to skillet with tomato sauce. Add vodka and toss. Add cream and toss.
