Pizzocheri Pasta Basic Recipe

Ingredients

2 c Buckwheat flour

1 pn Salt

4 Jumbo eggs

1/2 tb Vegetable oil

1 1/2 c Unbleached white flour


Directions

Make pasta in regular way using well method. Roll into sheets on thinnest setting and then cut sheets into horizontal strips 1 inch thick. Cut across the strips in 2 inch intervals to yield 2 inch long and 1 inch tall strips. These are pizzocheri.
