Pork and Blackeyed Peas

Ingredients

1 lb blackeyed peas raw then cook

1 1/2 lb boneless pork

1 ea onion chopped

1 large unpeeled apple diced

1/4 cup catsup

1/4 cup prepared mustard

2 tsp horseradish

1 tsp table salt


Directions

Soak peas overnight. Drain. Place in covered casserole. Cube pork in 1 inch pieces. Trim fat. Mix with peas. Brown onion, adding apple, 1 cup water, remaining ingredients. Combine and pour over casserole. Cook in 350 F oven for 1 hour. Serves 8
