PORK, Pork Chops with Mango Relish

Sis. Marlene Knott, Idaho Boise Mission -- A delicate marinade flavors these pork chops with the fragrant seasonings of India & tenderizes the meat at the same time. The colorful relish would be delicious alongside any grilled entree.

Ingredients

2 tablespoon

2 teaspoon

2 minced, cloves

1 teaspoon

1/2 teaspoon

1/4 teaspoon

1/4 teaspoon

1/8 teaspoon

1/8 teaspoon

1/8 teaspoon

dash of

4 (4 oz.) each,

1 large , peeled & diced

3/4 cup , chopped

3/4 cup , chopped, seeded

4 teaspoon , chopped, seeded

2 teaspoon

1/4 teaspoon


Directions

In a large resealable plastic bag, COMBINE the first 11 ingredients. ADD pork. SEAL bag and turn to coat; refrigerate for at least 2 hrs. Meanwhile, combine the relish ingredients in a bowl. Let stand at room temperature for 1 hr.; refrigerate until serving time. DRAIN and discard marinade. Coat grill rack with nonstick cooking spray before starting the grill. GRILL pork chops, COVERED, over Med-High heat for 6 - 10 mins. on each side or until a meat thermometer reads 160?. Serve iwth the mango relish..
