Pork Roast , Sauerkraut and Dumpling

Ingredients

3 to4 lb Pork loin roast

2 lbs Pork steaks

1 stick Butter

2 tablespoons Salt

2 tablespoon Garlic salt

2 pound bag sauerkraut

5 cups All purpose flour

1/2 teaspoon Baking powder

1/2 cup Milk

4 tablespoons Bacon Fat


Directions

For the pork roast: Place pork steaks in the bottom of a roasting pan with one stick of butter and salt. Put in a 475 degree oven and brown well. When browned put in 4 cups water to deglaze the pan. Remove dripping and repeat until you have enough drippings. After you are done with the drippings reduce oven to 325 degrees and season pork roast with garlic salt, place on a rack in oven and cook to a internal temp. of 150 degrees. Leave pork steaks in bottom pan. SAUERKRAUT: Drain kraut and put in pan with salt and pepper to taste, add 1 cup of water and simmer for 30 mins. Chop 4 slices of bacon and 1 onion , cook until browned . do not burn. Then add to kraut and cook for 5 mins. more. This can be made ahead of time. DUMPLING: Cook and mash potatoes then measure out 4 cup, add your eggs, milk, baking powder . Add the flour one cup at time. It should not be to lose or to stiff. It is good to test one in boiling water to check for the right consistency. Then drop in boiling water foe 2 to 3 min. They float to the top when done. Take then out and place in a crock pot and a dipper of the drippings. Repeat until all dumplings are done. DRIPPINGS: Cut 4 onion and brown in bacon fat, be careful not to burn it. When brown add drippings that you made early from the pork steaks. Reserve some of the drippings for serving.
