Pork Sirloin with Cranberry Chipolte Sauce

Ingredients

4 pounds Pork Sirloin Roast

1 c cranberry sauce canned or homemade, can use whole

1/2 onion minced

1 teaspoon worcesteshire

1-2 pepper Chipotles, canned in adobo sauce minced

1 teaspoon onion powder

1 teaspoon Garlic powder

1 teaspoon Chili powder

1 teaspoon dried sage

1 teaspoon salt


Directions

Sauce Mix sauce ingredients together in Ziploc bag. Put in roast and marinate 8 hours to overnight. Ready to cook: When ready to cook, remove pork loin and let sit for 30 minutes at room temperature. Preheat oven to 450 F. Position oven rack on the lowest level in the oven. LIne a roasting pan with foil and place the pork loin on a rack (if you don't have a roasting rack just place in pan). Roast in 450 F oven for 20 minutes. Reduce oven heat to 275 F. Roast an additional 1 (recommended) to 1-1/2 hours or until an instant-read thermometer inserted in the center of the roast indicates a temperature of 150 F (160 F for more well-done). (Roast will continue to cook after you remove it from the oven.) Remove and tent the roast with foil and let rest for 10 minutes before carving. Bring remaining sauce ingredients to a boil and then simmer for 5-10 minutes before serving.
