Portuguese Kale & Potato Soup

Ingredients

2 large potatoes cut into 1-inch pieces

2 Garlic cloves minced

1 1/2 cups onion chopped small

3/4 cup carrots chopped

1/8 cup olive oil

4 cups chicken broth

4 cups Water

3/4 lb spicy sausage 1/4 in thick slices

3/4 lb kale stems removed, leaves julienned

1 lb Red potatoes 1 inch pieces


Directions

1. In pot saute onion, garlic and carrot in olive oil, stirring till soft. Add potatoes, water and broth; bring to boil then simmer 10-15 min till potatoes are soft. 2. Meanwhile brown sausage, transfer to paper towel. 3. Transfer cooked potatoes to blender with slotted spoon, adding 1 1/2 cups cooking liquid and puree till smooth (hold cover) or use hand blender. Return puree to pot and add sausage, kale, and red potatoes. 4. Simmer, covered, 10-15 min till potatoes are done. Season.
