Potato-Greek Salad

Ingredients

1 red onion thin sliced

1 pound potatoes small (red bliss works well)

3/4 cup Olive oil

1/3 cup lemon juice

3 cloves garlic crushed

1 teaspoon salt

1/2 teaspoon pepper

1/4 teaspoon crushed red pepper flakes

1/4 cup feta cheese crumbled

1/4 cup parsley chopped


Directions

Slice onion thin. Scrub potatoes and cut into large bite-sized chunks. Rinse well Put potatoes into pot of cold water (cover by 1.5 inches). Bring to a boil & boil over medium-high for about 15 minutes. Test for doneness after 10 minutes (pierce easily with a fork). Remove potatoes from heat and drain them. Place in a serving bowl. Add onions & toss. Combine olive oil, lemon juice, garlic, salt/pepper & whisk. Add dressing to potatoes & onion just before serving. Sprinkle with feta & parsley.
