potato pancakes

Ingredients

1 Egg

1 tsp Salt

1 medium to large Potato

1 tbsp Flour

1 large Onion chopped fine and divided by 5

1 to 2 pounds frozen hashbrowns thawed


Directions

In blender: blend egg, salt, potato, flour and 1/5 of chopped onion for 15 seconds or until smooth. Do this 5 times and pour all 5 mixtures into large bowl. Add thawed hash browns (1-2 lbs.) Stir with spoon or mix on low mixer. Fry in bacon grease. Serves 8 to 10 people.
