Potato Pancakes

This is great with corned beef and pastrami sandwiches or Reubens.

Ingredients

8 oz. red potatoes

1/2 large

1/4 cup

1/2 teaspoon

1/2 teaspoon

1 tablespoon minced

1 tablespoon minced

1 large 1-2 eggs enough to hold ingredients together

1 tablespoon

1 tablespoon


Directions

Use the large grating dish on a food processor or use a manual grater for the potatoes and onion. In a large bowl combine potato, onion and remaining ingrediets. Mix well. Cook on a griddle or in a skillet on medium high heat (375 degrees) until crisp and brown using a combination of oil and butter. About 5 minutes per side. Makes 4 potato pancakes.
