.5 tbsp extra virgin olive oil
1/3 cup Carrots Diced
1/3 cup Bell Pepper Diced
1/3 cup Corn Frozen
1/4 teaspoon ground cumin
2 tablespoons Salsa Preferably tomatilla
1/2 teaspoon Lime Juice
1 cup fresh baby spinach roughly chopped
2 tablespoons cilantro chopped
1 tablespoon Pumpkin Seeds
Salt to taste
Very good. I made it cold. Added 2 oz of Feta. Made dressing with cummin & chili powder.
