Quinoa Roquefort Salad

Ingredients

100 gram Roquefort cheese

1 tablespoon Mascarpone

1 tablespoon Dijon mustard

1 tablespoon Yellow mustard

1 clove Garlic crushed

2 tablespoons Wine vinegar

4 tablespoons Olive oil

0.5 teaspoon Black pepper fresh grated

0.5 cup Wild rice raw

0.5 cup Quinoa raw

0.25 cup Celery finely chopped

0.6667 cup Walnuts chopped

0.5 cup Sun-dried tomatoes chopped

1 tablespoon Chives

1 bunch Spinach raw, fresh

1 bunch Rucula


Directions

For the vinaigrette, put all the ingredients except the Mascarpone cheese and the olive oil and mix in a blender. When everything is mixed add the olive oil and continue mixing till you have a cream, add the Mascarpone and keep beating till you have a softer cream. Cook the rice and quinoa (separated) according to the instructions, pass on cold water, drain very well and put in a bowl. Add all the ingredients except the green leaves and mix well. Serve over a layer of green leaves.
